Key Lime Pie 1 cup flour 1/2 tsp salt 1/3 cup plus 1 tablespoon crisco 3 tablespoons cold water 1 1/2 cups sugar juice from 1 1/2 key limes zest of 1 lime 3 eggs 2 tablespoons cornstarch 2 tablespoons flour 2 cups milk 1 tablespoon butter 2 tablespoons sugar 1 tablespoon cornstarch 1/2 cup water 3 egg whites 3 tablespoons sugar 1/2 tsp cream of tartar
Mix together flour,s alt and crisco, then add cold water. Roll out dough on floured board, put in pie pan. Bake in a preheated 375 F oven for 10 mins or until slightly brown
Combine sugar, key lime juice, zest, eggs, cornstarch, flour, milk and butter. Cook in double boiler, stirring constantly, until thick, about 20 - 25 minutes.
Combine sugar, cornstarch and water in a saucepan and cook until thickened and clear. Set aside to cool
Beat egg whites, sugar and cream of tartar on high until smooth then add the cornstarch mixture. Beat on high until fluffy.
Put pie filling in pie crust, top with meringue. Bake at 300 degress for 10 minutess then at 350 until meringue browns. Take out and let cool.
