Key Lime Pie

1 cup vanilla wafer crumbs
1/4 cup butter
1/2 cup chopped pecans
3 eggs, separated
1/2 cup lime juice
1 teaspoon grated lime rind
1 can sweetened condensed milk
3 drops green food coloring
1/4 teaspoon cream of tartar
6 teaspoons sugar

Mix crumbs, butter, and pecans thoroughly; reserve small amount
for topping. Press remaining mixture on bottom and up sides of an
8-inch pie pan; chill for 20 minutes. Beat egg yolks, add lime
juice, grated rind, milk, and food coloring; mix well. Pour into
pie shell. Beat egg whites until frothy; add cream of tartar.
Beat until stiff; add sugar gradually. Pile onto pie lightly; seal
edge. Sprinkle with reserved crumb mixture. Bake at 425 degrees
for 4 minutes of until lightly browned.
