Key Lime Pie

Shortcrust pastry for single crust pie
1 tablespoon unflavoured gelatine
70 ml boiling water
3 egg yolks
275 ml sweet condensed milk
140 ml fresh lime juice (not cordial)
few drops green food colouring
3 egg whites
5 tablespoons sugar

Prepare pastry and bake blind in a 9 inch pie dish. Cool. Sprinkle
gelatine on boiling water and stir to dissolve. Chill until syrupy
but not set. Beat egg yolks, add condensed milk, lime juice, food
colour and gelatine mixture. Mix well and pour into the pie crust.
Beat egg whites until stiff. Add sugar, one tablespoon at a time,
beating well after each addition. Spread over filling. Place under
hot grill until pale gold ( 3 to 5 minutes ).
