KEY LIME PIE

1 pkg. (3 oz) lime gelatin
1 cup boiling water
1 to 2 t. grated lime rind
1/2 cup lime juice
1 egg, separated
1 1/3 cup sweetened condensed milk
1 t. aromatic bitters
1 cup sour cream
Few drops green food coloring (optional)
1 baked 9-inch pie shell (cooled)

Dissolve gelatin in boiling water. Add lime rind and juice. Beat
egg yolk slightly, slowly add gelatin stirring constantly. Add
milk, bitters and sour cream, stirring until blended. Chill until
slightly thickened. Beat egg white until soft peaks will form;
fold into gelatin mixture. Add coloring. Pour into pastry shell.
Chill until firm. Garnish with whipped cream or whipped toping and
lime slices.
