SEARCH RECIPES: LOCATION: Recipes >> Key Lime Pie >> Key Lime 26    Key Lime 26 Key Lime Pie 1 tablespoon unflavored geletin 1/2 cup cold water 4 eggs, separated 1 cup sugar 1/2 cup lime juice 1/2 tsp salt 2 tablespoons Angostura bitters grated peel of one lime 9" pie shell - baked whipped cream for topping Place geletin in the cold water and let dissolve. In separate bowl beat together egg yolks, 1/2 cup sugar, lime juice and salt. Cook in double boiler until mixture coats a spoon. Remove from heat. Add geletin mixture. Add bitters and lime peel. mix until thick. beat egg whites and 1/2 cup sugar until stiff peaks form. fold into egg mixture. Pour into baked pie crust. Chill. I just love it. I was very surprised to read about the addition of the 2Tablespoons of the Angostura, thought that might be a misprint but did it anyway. I'm glad now that I did, it really adds to the pie. Since I'd never had this before I was surprised also since the pie turns out orange. I added food coloring to make it look better but that really isn't necessary anymore. Also now that I have a lime juicer which I bought especially for this it's much easier to prepare. I recommend this to everyone who likes lime pies and all those who have never tried one before but would like to!
